After a couple days of what felt like a heatwave (hello 70's!) the chilly crispness of the fall is back. Nothing says fall like soups & chili. And my boys love cornbread with their soups and chili so while at Trader Joes I picked up their cornbread mix. I had never used a mix before but had heard good things. As we were shopping Asher was obsessed with the pumpkins in the store but oddly didn't want one of his own. As we were heading home I thought I could make cute little cornbread "pumpkins" to go with our chili.
I just added a little red food coloring to the mix prepared as the package and baked them in cupcake tins. Then I chopped celery into little stems and poked them in the tops of the cooled muffins.
